Flourless Sweet Potato Brownie Bites

Prep Notes

Prep time includes the 45 min to bake the sweet potato. Preferably bake a sweet potato and mash. If you use canned sweet potato, prep time reduced to 10 minutes. Used any left over cooked sweet potato on salads or eaten as a side.

Ingredients

  1. 1 cup mashed sweet potato
  2. 1/2 cup smooth nut butter of choice (I used almond butter)
  3. 2 T pure maple syrup
  4. 1/4 cup cocoa powder (I used half dark cocoa powder, half standard cocoa powder)
  5. Handful of chocolate chips (optional)

Directions

  1. Preheat the oven the 350 degrees, grease a small cake pan or loaf pan and set aside.
  2. In a small microwave-safe bowl or stove top, melt your nut butter with your pure maple syrup. In a large mixing bowl, add the mashed sweet potato, nut butter, maple syrup and cocoa powder and mix very well. If using chocolate chips, stir them through.
  3. Pour the mixture into the greased pan and bake for around 20 minutes or until cooked through. (I left mine in for 3 - 5 min more). Remove from the oven and allow to cool completely before slicing into pieces.

Notes

These bites are better the next day and can be frozen.
